Quick and Yummy Crustless Cheesecake

There was no food processor in Klatawa’s galley so I simply stirred together all the ingredients for this simple cheesecake. The results were not as smooth as this version but both styles are yummy.
Serves 8

Preheat the oven to 350 degrees. Very generously butter a 6-cup ceramic tart pan or casserole dish and set aside.

Place all of the ingredients, in the order listed, in the bowl of a food processor. Pulse the mixture until the cottage cheese is smooth and all the ingredients are well blended, scraping down the sides of the bowl once or twice. Pour the mixture into the prepared baking pan and smooth the surface. Bake at 350 degrees for 50 minutes or until the center is just set. Remove from the oven and allow to cool slightly before cutting into pieces and serving.

Cook’s Notes:
For a special dessert, serve with sliced, sweetened strawberries.


1 pound cottage cheese
8 ounces cream cheese,    softened
1/3 cup flour
4 eggs
1/4 cup butter, softened
1/4 teaspoon salt
1/2 cup cream
3/4 cup sugar
1 teaspoon lemon rind, grated
